They use locally sourced ingredients, and make great smoked meat dishes, along with a lot more. The Trenton location is small, but it is a great place to visit. At the 1911 Smoke House they celebrate every day, as they have a daily toast at 19:11 (7:11 PM) and give out a free shot to everyone of legal drinking age in the building!
