Stancia Peruvian Fusion Restaurant in Linden, NJ
In a new city, I enjoy moving as the way opens. All that means is I look for things that interest me and I seek out opportunities to learn about new things. Food is one of my favorite ways to learn about cultures, and when I was in Linden, NJ on an evening in August, I was introduced to Peruvian food during a night shoot along Wood Avenue.
The first clue that I was going to enjoy a good meal was that the place was crowded. Being alone, I asked to sit at the bar at the back of the restaurant. There was a family table of 14 next to me, a wide range of ages, all speaking Spanish. Another good sign! As it turned out, they were there to celebrate a birthday. The entire staff (kitchen included) came out to joyfully play percussion instruments (more cow bell!) as they presented a birthday cake.
Service was excellent and attentive, as I was quickly brought an adult beverage and some appetizers. I ordered Ceviche con basa as my main course from a long list of fabulous sounding possibilities. Good choice! It was mouth watering, tender, and beautifully seasoned. I would have gone back the next night, but they’re closed on Wednesdays. Fortunately I travel Route One a lot, and I’ll be sure to remember Stancia the next time I’m ready for a meal in Northern NJ.
